Beef or Pork and Onions in Soy Sauce (Bistek Tagalog)
Mix 1 cup of soy sauce and juice of 1 lemon. Marinade sliced beef or pork (sliced thinly, but not too thin... like 1/3 of an inch thick) overnight or for 4-6 hours. Put some oil in a skillet. Fry meat slices, save the marinade. Saute 2-3 cloves of crushed/minced garlic, and 1 whole onion (or more if you love it) cut in circles in a bit of oil, just enough to coat. Add the marinade and simmer for 10 minutes. Place the beef slices in a dish, pour the sauce and serve (preferably with rice).
In the Philippines, we use calamansi instead of lemons. I'd love to try making this with orange for a sweeter version... I haven't tried using limes though. Using lemons give it more tang and that lovely lemon smell. I'll experiment using other citrus fruits too.
